Frank Dodd is Executive Chef at Hillebrand Winery Restaurant, in Niagara-on-the-Lake, Ontario.
Born in Bolton, England, Dodd has worked at the 5-star Relais and Chateaux Burnham Beeches Hotel in Victoria, Australia, the 5-star Savoy in London, England, the Dorchester Hotel, a Leading Hotel of the World and the Michelin-Star Cliveden Hotel.
After six years in London, Dodd's career expanded internationally to the 5-Diamond Relais & Chateaux White Barn Inn in Kennebunk, Maine, and the 5-star Grand Hotel Amsterdam in Holland. In 2000, Dodd moved into the Canadian culinary scene with the successful opening of Biff's in Toronto. After working as Executive Chef at the 4-Diamond Wedgewood Hotel in Vancouver, he moved to Langdon Hall in Cambridge, Ontario, where he led the dining room to a coveted CAA/AAA 5-Diamond award.
In each country, Dodd uses indigenous produce in his dishes to add regional flavors to his cuisine. He continues this practice in the Hillebrand Winery Restaurant, as its Executive Chef. "I work closely with the Hillebrand winemaking team," says Dodd. "I want to further explore the balance of the art of winemaking with the art of food to make regionally inspired dishes that truly accentuate their wines."
